Wine-Poached Salmon is simple and quick to prepare. You can use any seasoning you like here, but thyme works especially well. We are using a dry white wine (sauvignon blanc) for the poaching liquid. Always use a good quality wine to cook with (if you wouldn’t want to drink it, you probably don’t want to flavor your food with it). This is also good with a little lemon zest thrown in.

Wine Poached Salmon
Ingredients
- 12 ounces farmed atlantic salmon (skin removed and cut in two 6 ounce or three 4 ounce pieces)
- 1/3 cup white wine (dry, like sauvignon blanc)
- 1 teaspoon thyme (fresh)
Instructions
- Place salmon in a skillet. Pour wine over top and sprinkle with thyme.
- Heat over high heat until wine starts to simmer, then cover and reduce heat to low-medium.
- Simmer until salmon is cooked (completely opaque and segments flake apart easily), approximately 10-12 minutes. Discard poaching liquid and serve.
