Ingredients

  • 12 ounces farmed atlantic salmon (skin removed and cut in two 6 ounce or three 4 ounce pieces)
  • 1/3 cup white wine (dry, like sauvignon blanc)
  • 1 teaspoon thyme (fresh)

Instructions

  • Place salmon in a skillet.  Pour wine over top and sprinkle with thyme.
  • Heat over high heat until wine starts to simmer, then cover and reduce heat to low-medium.
  • Simmer until salmon is cooked (completely opaque and segments flake apart easily), approximately 10-12 minutes. Discard poaching liquid and serve.
