Gluten-Free Fudgy Brownies
Ingredients
- 1/2 cup butter (or, ghee, coconut oil)
- 1/2 cup olive oil extra virgin
- 1 3/4 cup sugar or maple sugar
- 3 large eggs
- 1 1/2 teaspoons vanilla
- 3/4 teaspoons salt
- 2/3 cups cassava flour
- 1 1/2 cups cocoa powder sifted
- 1/2 teaspoon baking powder
- 3/4 teaspoon cream of tartar
- 3/4 cup walnuts chopped
- 3/4 cups dark chocolate chopped (or chocolate chips)
Instructions
- Preheat oven to 325°F. Grease a 9×13-inch pan, line with parchment paper, and then grease the parchment paper. Alternately, use a silicone pan.
- In a medium bowl, whisk together butter, olive oil, sugar, eggs, vanilla and salt until smooth.
- In a small bowl, mix together cassava flour, cocoa powder, baking soda and cream of tartar. Add flour mixture to egg mixture, and stir to form a smooth batter. Fold in walnuts and dark chocolate.
- Spread batter evenly over prepared pan. Bake for 15 minutes. Remove from oven and let rest for 10 minutes. Add back to the oven and cook for another 15 minutes.
- Cool, cut into squares and enjoy!
