Baba Ghanoush
Ingredients
- 2 large eggplants peeled and sliced in 1-inch rounds
- 3 tablespoons olive oil divided
- 1/2 teaspoon salt
- 2 cloves garlic crushed to course paste
- 2 tablespoons lemon juice
- 2 tablespoons tahini
- 1/2 teaspoon ground cumin optional
Instructions
- Preheat oven to 400F.
- In a bowl, toss the eggplant rounds with 2 tablespoons of the olive oil and the salt. Place on a rimmed baking sheet and roast for 20 minutes.
- Place the roasted eggplant in a blender or food processor with the remaining ingredients and blend until smooth. Taste and add more salt, if desired.
- Pour the baba ghanoush into a bowl and place in the refrigerator to chill before serving. Drizzle with additional olive oil and sprinkle with cumin, if desired. Store in the refrigerator for up to a week.
