In a bowl, toss the eggplant rounds with 2 tablespoons of the olive oil and the salt. Place on a rimmed baking sheet and roast for 20 minutes.
Place the roasted eggplant in a blender or food processor with the remaining ingredients and blend until smooth. Taste and add more salt, if desired.
Pour the baba ghanoush into a bowl and place in the refrigerator to chill before serving. Drizzle with additional olive oil and sprinkle with cumin, if desired. Store in the refrigerator for up to a week.
