Greek Salad with Red Wine Vinaigrette
Ingredients
For the Salad
- 6 cups romaine about 1 medium head, cut into 2-inch pieces
- 1 1/2 cups tomatoes about 2 small, cut into 1-inch chunks
- 1 cup cucumber unpeeled, about 1 small, cut into 1/4-inch thick slices
- 1/2 cup olives kalamata
- 1/4 cup onion red, about 1/2 of a small onion, diced
- 1/2 cup feta cheese or non dairy substitute cut into 1/2-inch cubes
For the Vinaigrette
- 2 tablespoons vinegar red wine
- 1 tablespoon olive oil extra virgin
- 1/2 teaspoon oregano dried
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper freshly cracked
Instructions
- Gently toss lettuce, tomatoes, cucumber, olives, red onion, and feta in a serving bowl. Cover and refrigerate until ready to serve.
- Whisk together vinegar, olive oil, oregano, salt and pepper. Just before serving, pour over salad and gently toss to evenly distribute the dressing.
