Ingredients

For the Salad

  • 6 cups romaine about 1 medium head, cut into 2-inch pieces
  • 1 1/2 cups tomatoes about 2 small, cut into 1-inch chunks
  • 1 cup cucumber unpeeled, about 1 small, cut into 1/4-inch thick slices
  • 1/2 cup olives kalamata
  • 1/4 cup onion red, about 1/2 of a small onion, diced
  • 1/2 cup feta cheese or non dairy substitute cut into 1/2-inch cubes

For the Vinaigrette

  • 2 tablespoons vinegar red wine
  • 1 tablespoon olive oil extra virgin
  • 1/2 teaspoon oregano dried
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper freshly cracked

Instructions

  • Gently toss lettuce, tomatoes, cucumber, olives, red onion, and feta in a serving bowl. Cover and refrigerate until ready to serve.
  • Whisk together vinegar, olive oil, oregano, salt and pepper. Just before serving, pour over salad and gently toss to evenly distribute the dressing.
