Oven-Baked Sweet Potato Fries contain a good amount of vitamins, minerals, and fiber. This is a kid-friendly side dish easy enough for a weeknight.

Oven-Baked Sweet Potato Fries
Ingredients
- 1 1/2 pounds sweet potatoes
- 3 tablespoons arrowroot powder
- 3 tablespoons olive oil (extra virgin) or fat of choice
- 1/2 teaspoons sea salt
- 1 teaspoon maple sugar (or brown sugar) optional
- 1/2 teaspoon cinnamon ground, optional
Instructions
- Preheat the oven to 400 F. Line a rimmed baking sheet with parchment paper.
- Peel the sweet potatoes and cut into french fry-like strips (4 to 6 inches long and 1/4 to 3/8 inch thick.
- In a bag or bowl, toss the sweet potatoes with the arrowroot powder to completely coat. Discard any arrowroot powder that didn’t stick to the sweet potatoes. Toss the coated sweet potatoes with the melted ghee and salt.
- Arrange the sweet potato strips on the prepared baking sheet in a single layer. Taking the time to separate the strips so they aren’t touching each other.
- Bake for 15 minutes. then flip each strip over and bake for an additional 10 to 15 minutes, until browned with crispy edges.
- Sprinkle the warm fries with the maple sugar and cinnamon, if desired, and serve. (Or, serve with ketchup as pictured).
