Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoons lemon zest
  • 2 tablespoons lemon juice (from one lemon)
  • 1 tablespoon capers
  • 2 tablespoons parsley fresh and chopped
  • 1 tablespoon tarragon fresh and chopped
  • 2 stalks celery finely diced
  • 8 ounces sardines (canned, drained)
  • 6 cups arugula or mustard greens
  • cracked pepper to taste

Instructions

  • In a bowl, mix together the olive oil, lemon zest, lemon juice, capers, parsley, tarragon, and celery.
  • Toss the sardines with the dressing. Place the arugula on two serving plates and pour sardine mixture over top. Season with cracked pepper, to taste.
