Shrimp, Avocado, Mango and Fennel Salad

Ingredients

  • 1/2 cup cilantro chopped
  • 3 tablespoons lime juice
  • 3 tablespoons olive oil
  • 2 tablespoons fish sauce
  • 1 pound shrimp pre-cooked, tails removed
  • 1/2 large fennel bulb sliced very thin
  • 1 medium mango peeled and diced
  • 1/2 cup onion preferably red, sliced very thin
  • 1 large avocado diced

Instructions

  • Combine cilantro, lime juice, olive oil, and fish sauce in a bowl or measuring cup.  Set aside.
  • Toss shrimp, fennel, mango and onion in a bowl.
  • Drizzle dressing over the salad and toss to completely coat.
  • Add diced avocado and gently toss to incorporate.  If you’re making this salad ahead of time, keep the avocado separate and add just before eating.
