Seafood Leek Soup

Ingredients

  • 4 cups chicken stock
  • 1 pounds mixed seafood calamari, clams, shrimp, mussels, etc.
  • 6 ounces salmon cut into chunks
  • 6 ounces tilapia (or cod, halibut, etc.), cut into chunks
  • 4 cups leeks (about 1 pound), chopped
  • 1 cup white wine (dry) like pinot grigio
  • 2 tablespoons parsley chopped
  • 1 teaspoon salt to taste

Instructions

  • Bring broth to a boil over high heat, then lower heat to keep a rolling simmer.
  • Add seafood, fish and leeks to broth.  Cook until seafood is completely cooked and leeks are soft, about 15-20 minutes.
  • Add wine, parsley and salt.  Cook another 5 minutes.
