Homemade "Bangers"

Ingredients

  • 1 pound pork
  • 1/2 teaspoon thyme dried
  • 1/2 teaspoon sage rubbed
  • 1/4 teaspoon mace
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon ginger
  • 1 teaspoon salt
  • 1 tablespoon olive oil

Instructions

  • Mix herbs and ground pork in a small bowl. Mix with clean hands and make sure the spices are blended well. Form 8 links or 4 large patties.
  • Heat a skillet (cast iron great here) over medium-high heat. Add cooking fat to skillet. Add Homemade "Bangers" to skillet.
  • Cook on the first side for approximately 3 minutes or until you can see the meat cooking on the edges and the underneath looks a little browned. Rotate a quarter turn and sear another 3 minutes. Turn the sausages again another quarter turn and continue cooking another 3 mintues. Turn one final time and add a couple tablespoons of water and steam for the final 3 minutes.
