Ingredients

  • 1 cup tapioca starch
  • 1/4 cup coconut flour sifted (measure after sifting)
  • 1 teaspoon oregano dried
  • 1/2 teaspoon garlic dried, granulated
  • 1/2 teaspoon salt
  • 1/2 cup coconut milk full fat, warmed
  • 1/2 cup olive oil
  • 1 large egg beaten
  • 1 tablespoon olive oil

Instructions

  • In a large mixing bowl, whisk the tapioca starch, coconut flour, oregano granulated garlic, and salt until well combined.
  • In a separate bowl, whisk together the warm coconut milk, oil, and egg. Pour over the tapioca starch mixture and stir to combine. Let sit for 3 to 5 minutes to thicken before using to make pizza.
  • Rub a pizza stone or large well-seasoned cast-iron skillet with the olive oil and place in the oven to heat. Preheat oven to 450 degrees.
  • Remove the hot pizza stone or skillet from the oven. Pour the pizza crust dough into the heated pan and spread it with a spatula to a 9- to 10-inch circle of even thickness (it should be about 1/4 inch thick).
  • Bake for 7 to 9 minutes depending on how crispy you like the crust. See note below.
  • If making more than one pizza you may transfer the baked pizza crusts to a baking sheet. Lower temperature to 400 degrees. Top with your favorite toppings and return the pizza to the oven and bake for another 8 to 10 minutes and serve!

Notes

Tip: You can par bake the crust and then store it in the freezer for an extra-quick weeknight meal later. Bake the crust for 7 minutes. let it cool completely, wrap it in plastic wrap, and place in a freezer-safe container. Par-baked crusts will keep in the freezer for up to 6 months. When you're ready to make a pizza, you can use the crust directly from the freezer, simply increase the baking time to 12 to 14 minutes.
